  • Don’t pinch on the salt!!—Salt makes just about everything better, but potatoes simply demand it. Don’t worry about oversalting…a latke will typically take a lot. You’ll also lose some of the salt in the cooking process, so sprinkle a little more on when you take the latkes out of the pan.
  • Fresh is best—You may be tempted to prep the day before, particularly if you’re having latkes for breakfast during Hanukkah. Potatoes don’t generally fare well, though, once you remove the skin. Exposing the white, meaty interior of a potato to the air will cause them to oxidize, turning brown in color. They can also get mushy when exposed to oxygen. To save yourself a little time in preparation, shred the potatoes with a food processor.
  • Always have sour cream and applesauce available—You can generally divide the latke-eating public into two camps—those who put sour cream on top and those who go with applesauce. The real rebels will put both on at the same time!! Always make sure you have plenty of both.
